♥ Any plans for Valentines Day? Dave & I really don’t have any plans for this “supposedly” romantic holiday, in fact I barely see him these days but thank heavens for FaceTime. What would all us do with ZOOM, Skype & FaceTime? Anywho, I planned on making a special Valentines Day dinner for the my family and Dave. On my menu for the main course is: standing rib roast, cornbread stuffed cornish hens, Yorkshire pudding, maple glazed carrots, oven browned potatoes, roasted artichokes and cinnamon apple compote. Mom is making the appetizers: bacon wrapped scallops, her famous dip with crudités, and camembert in puff pastry topped with candied pecans. On the dessert menu is individual chocolate lava cakes, Frangipane tartlets and chocolate covered strawberries, I think everyone will be happy with the menu. You may not or not know this, I love cooking! One of my hobbies is coming up with new recipes and entering them into contests (I’ve been entering recipe contests since 5th grade) and fairs. If anyone is interested in any of these recipes for the food I mentioned just let me know. The whole “Date Night” experience won’t be the same this year thats for sure, but being with my loved ones will make the day complete. I definitely appreciate those closest to me, having my family and here and healthy means everything to me specially since the pandemic.
